To create Mae dOuro, we placed the pulped beans inside a stainless-steel tank in the processes know as semi-carbonic fermentation - this technique is a variation of our semi-carbonic maceration, where the cherries are fermented. By fermenting the beans in a hermetic environment, new flavors are achieved due to the intra-cellular fermentation.
