To Caipora, the hunter must not kill more than what is needed for their survival. This is his law in the woods, and those who do not abide by it will face the consequences. The Caipora has the whole body covered by hair and walks through the forests mounted on a wild pig and carrying a long rod.

The natives believed that the Caipora was afraid of clarity, so they protected themselves from it by walking with torches during the night.

Anyone who wants to try to evade the Caipora should give him gifts: the Caipora appreciates tobacco, and so it said that, before leaving on a Thursday night to hunt , one should leave tobacco on the trunk of a tree and say: "Take this, Caipora, and let me go." The good luck of a hunter is also attributed to the gifts he offers. In some parts of Brazil, the legend has become adjective: "to be caipora" means to be unlucky in life.

This very small farm is a lab, where we test new ways of producing coffee. The lab is rich with new and unusual varietals, processing methods, drying techniques and limitless experiments. Each coffee has an unique cup profile and scores 88+, is fully traceable, planted and grown with history and can never be replicated.
The IAC Catuaí SH3 Arabica coffee is a pre-cultivar developed at the Instituto Agronômico de Campinas
(IAC), Brazil. It comes from the F1 crossing, carried out in 1967, between the cultivar Red Catuaí IAC 46 and
IAC 1110-8 (BA10).

The varietal comes from the partnership between Daterra and IAC and it's the very first time we're able to see how it tastes in our lands. We placed the cherries inside a stainless-steel tank in the processes know as semi-carbonic maceration. By fermenting the cherries rather than pulped beans, new flavors are achieved due to the intra-celullar fermentation.

These coffees are very rare and very expensive and are thus roasted in small batches and because of that these coffees are not shipped every day. They will be shipped once or twice a week to ensure freshness.
